Looney Chicken

I know that sounds terribly un-PC, but this recipe is based on a dish my mum used to make and that was her name for it!  Might sound a bit strange but what you end up with is a very tasty alternative to classic roast chicken and a lovely sauce.  Serves 4-6

1 chicken, about 1.3 to 1.6kg
1 onion, peeled, halved and sliced
1 bulb of garlic, separated into cloves but not peeled
200g carrots, peeled and diced
3 sprigs thyme
1 pinch of salt
Freshly ground black pepper
1 x 330ml bottle lager
1 tbsp light olive oil

1) Preheat the oven to 190 centigrade, 170 fan. 

2) In a flameproof roasting dish, heat the oil and brown the vegetables lightly.  Sit the chicken on top, season and then pour the lager around it. Bring to the boil and then transfer to the oven for an hour.

3) After the hour, take it out and cover with double cooking foil.  Return to the oven for another hour.  Take the dish out of the oven 20 minutes before you want to eat and don’t take the foil off !  When you’re ready to carve, you’ll notice that the flesh is super-tender and just falls off the bone.

4)For the sauce, add about 125ml boiling water to the dish and use a spatula to scrape all the bits off the bottom of the tin.  Pass this through a sieve into a jug, pressing well to extract all the flavour.  Serve as you would roast chicken – with plenty of veg, roasties or chips, even with a gratin dauphinoise if you’re feeling flash!
