This recipe was handed down by my great great auntie Edna, who recommends keeping it after bottling for 1-2 weeks if giving to children – but 3 to 4 weeks for the adults!

700g granulated sugar
8 good fresh heads of elderflower
2 lemons, thinly sliced
2 tablespoons white wine vinegar
4.5 litres boiling water
Screwtop plastic bottles
Sterilising tablets or solution (such as Milton)

1) In a large saucepan, stir the sugar into the boiling water until dissolved.  Add the elderflowers, lemon slices and vinegar.

2) Let this mixture stand for 24 hours.

3) Sterilise your bottles, tops, a wooden spoon and a ladle.

4) Bottle in the screw-top bottles (leaving the solids behind in the pan!) and leave in a cool dark place as above.
