Roasted Quail with White Sprouting Broccoli

Quail is a versatile little bird whose lean flesh and small size means that it cooks quickly. The flavour of the meat welcomes many accompaniments. In this week’s seasonal supper it is marinated with five-spice, honey and garlic.


    2 x Quail
    500g  potatoes
    150g white sprouting broccoli

    1 ½ tsp  five-spice powder

    2 tbsp runny honey

    2 garlic cloves

    Drizzle of olive oil

    1 tbsp soy sauce



1. Sprinkle the five-spice over the quail and rub into the skin.
2. For the marinade: Finely chop the garlic and combine in a bowl with the honey, olive oil, soy sauce,  salt and pepper. Pour the mixture over the quail and mix well. Set aside for an hour.
3.  Preheat the oven to 200C.

4. Place the quail in a roasting tin and cook in the oven for around20 minutes.

5. Serve with steamed white sprouting broccoli and potatoes cooked as you wish.
