With a nice layer of fat and succulent, sweet meat, the thick end of belly is a great cut of meat for roasting. The fat has been scored, guaranteeing you the best crackling.

The Butcher: When whole the belly has a thick and thin end with the ribs attached. The thick end gives you plenty of meat and delicious creamy fat, not forgetting the crunchy crackling.

In The Kitchen: Try rubbing this joint with based coriander and fennel seeds, not only giving you lovely meat but also crisp crackling.
