Damson Sauce for Game
Simmer 250g/9oz damsons with 150ml/5fl oz each of red wine and port, 1 tbsp sugar, 2 cloves and an inch-long piece of cinnamon until the fruit is tender.
Rub through a sieve and add 2 tbsp of redcurrant jelly and the juice of 1 orange and a lemon. Season with black pepper and, off the heat, stir in 2 tbsp butter. Taste and add more sugar if needed.
