White Mausu black bean rayu is a umami-rich sauce of fermented black beans. It has a slight fruitiness to start, which builds into layers of smoky savoury miso flavour. Plus there’s a lovely chilli kick from gochugaru and chilli flakes. Use the hot sauce for dressing breakfast eggs, or as a dipping sauce for dumplings and tempura prawns.
