Appearance - Half oval-shaped sliced dark brown coloured bread with dusting flour on top.
Aroma well-rounded smell of rye and wheat free of unwanted odours or taints
Flavour Tang of sour flavour.
Texture A more evenly aerated crumb with a waxy moist crumb
