1 x Fennel Seeds (50g)

1 x Suffolk Carrots, washed (1Kg)
From Your Cupboard
20g salt
3 cloves garlic, finely grated or crushed
1 tsp smoked paprika
1–2 tsp chilli flakes
1 tbsp apple cider vinegar (optional)
1 x 1L jar or 2 x 500ml jars
Method
Salt the carrots
Mix the carrots with the salt and leave for 1–2 hours.
Massage well
Massage the carrots until they begin releasing liquid.
Add flavourings
Mix in the garlic, fennel seeds, smoked paprika, chilli flakes and vinegar (if using).
Pack into jars
Press the mixture firmly into your jar(s), ensuring the carrots are submerged in their own liquid.
Ferment
Leave at room temperature for 5–7 days, then refrigerate.
