Cabbage & Lentil Hotpot

A nourishing, rustic stew made with lentils and cabbage. Simple, warming and full of flavour, this is an ideal dish for using vegetables from the Staples Boxes and works especially well for batch cooking.

small piece leek, sliced

1–2 potatoes, diced

2 tbsp olive oil

2 cloves garlic, chopped (optional)

1 tsp smoked paprika or paprika

1 tsp dried thyme or mixed herbs

1 litre vegetable stock or water

Salt and black pepper

Cooking Instructions
1. Prepare the vegetables
Dice the onion and carrots.
Finely shred the cabbage.
Rinse the lentils under cold water.
2. Cook the base
Heat olive oil in a large saucepan or casserole pot over medium heat.
Add the onion and cook gently for 5 minutes until softened.
Add garlic (if using) and cook for 1 minute.
3. Add vegetables
Add the diced carrots and cook for 4–5 minutes.
If using leek or potato, add them at this stage.
4. Add lentils and stock
Add the lentils, paprika and thyme.
Pour in the vegetable stock and bring to a gentle simmer.
Cook for 20 minutes.
5. Add cabbage
Add the shredded cabbage and cook for another 10–12 minutes until tender and the lentils are soft.
6. Finish
Season with salt and pepper.
Add a splash of vinegar or lemon juice if desired.
To Serve
Serve in warm bowls with:

This stew keeps very well and is excellent for batch cooking, often tasting even better the next day.
