A.K.A 'The Connoisseur's Cut', pig's trotters were actually the choice of kings. While they may need a bit of slow cooking, the effort is more than made up for with a deep, rich flavour and tender texture. Try them stuffed, deep fried, roast or in soups, this cheap cut will not disappoint.
