Ricotta (literally meaning "re-cooked") is made by reheating the whey after the initial cheese making process, producing a delicious fine curd. Ricotta is a fresh cheese (as opposed to ripened or aged), grainy and creamy white in apperance, slightly sweet in taste and contains around 5% fat.
Our Ricotta is made from 100% sheep milk. It is a versatile cheese to cook with and lends its self well to both savoury and sweet dishes . Please do not confuse our Ricotta with supermarket varieties which are often very watery!
