Ricotta, meaning re-cooked cheese, and Salata, meaning ‘salted’, is a compact semi-hard salty cheese made using cow and sheep whey.
We make Ricotta by heating the organic whey left over from making a hard cheese to 90°C, resulting in the soft cheese floating to the surface.
The Ricotta is then Salted and left to press so that it becomes a firm cheese that is perfect for grating and crumbling.
