A quick, warming, everyday meal built around British split peas and winter greens. This is a flexible, gently spiced dish that works just as well on a weeknight as it does for batch cooking.

 

What’s in your Farm Direct box

  • Split Yellow Peas (500g)

  • January King Cabbage

  • Leeks (approx. 150g)

  • Brown Onion, medium (125g)


🧄 You’ll need from your fridge / store cupboard

  • Cooking oil (rapeseed or vegetable)

  • Garlic (2–3 cloves)

  • Fresh ginger (optional, thumb-sized piece)

  • Ground cumin (1–2 tsp)

  • Ground turmeric (1 tsp)

  • Chilli flakes or fresh chilli (optional)

  • Hodmedod’s fava umami paste (1–2 tbsp, optional but recommended)

  • Salt & black pepper

  • Water or vegetable stock

  • Lemon or vinegar (optional, to finish)


👩‍🍳 How to cook

1. Prepare the vegetables

  • Finely slice the onion and leeks

  • Shred the cabbage, removing the tough core

  • Crush or finely chop the garlic

  • Grate the ginger if using

2. Rinse the peas
Rinse the split yellow peas under cold water until the water runs mostly clear.

3. Start the dal base
Heat a good splash of oil in a large saucepan. Add the onion and leeks with a pinch of salt and cook gently for 8–10 minutes until soft. Stir in the garlic, ginger and spices and cook for 1–2 minutes until fragrant.

4. Simmer
Add the rinsed split peas and enough water or stock to cover by a few centimetres. Bring to a gentle boil, then reduce to a steady simmer. Cook for 25–30 minutes, stirring occasionally, until the peas are soft and starting to break down.

5. Add the cabbage
Stir in the shredded cabbage and cook for a further 10 minutes, until tender and well integrated.

6. Finish and season
Stir through the fava umami paste if using. Season well with salt and pepper, and add a squeeze of lemon or splash of vinegar if you like a little brightness.


🍚 To serve

  • With rice, flatbreads, or toast

  • Finished with chilli oil, yoghurt, or fresh herbs

  • Keeps well for 3–4 days and thickens as it cools
