How We Make It Coarsely ground pork, butchered nose to tail, is mixed with soft back fat, red wine, chilli and spice. It's matured for a few weeks to intensify the flavour - but not too long - to the perfect soft, scoop-able texture that will sit nicely on a pizza and melt into a delicious pool of savoury, spicy heat in the over.
