A lovely refreshing & light summer salad, perfect for serving at barbeques.
You will receive:
1 x Flat Parsley, (Bunch) (250g)
1 x Cherry Bell Radishes (pre-packed)
1 x Whole Lemon
1 x Recipe Card Cherry Bell Radish Tabbouleh
1 x biodegradable bag
You will need from your cupboard:
Salt
Olive / Rapeseed Oil
Cous Cous, Buckwheat, or any other grains
You might like to add on:
Some Pitta bread to serve alongside.
Simple Method:
Soak your Grains: Place 60g of your chosen grain (couscous or bulgur wheat work beautifully) into a small bowl. Pour over just enough boiling water to cover the grains by about 1cm. Cover with a plate and leave to stand for 10 minutes until tender, then fluff lightly with a fork and let cool.
The Herb Mountain: Wash your flat parsley thoroughly and shake or pat it completely dry (dry herbs chop much cleaner!). Strip the leaves away from the thickest stalks. Using a sharp knife, finely chop the parsley leaves. Take your time here—finely hand-chopped herbs give tabbouleh its iconic light texture.
Prep the Radishes: Top and tail your Cherry Bell radishes. Slice them into thin rounds, then cut those rounds into small, neat matchsticks or small dice. This ensures you get a beautiful, peppery crunch in every single bite.
Toss Everything Together: In a large mixing or salad bowl, combine your cooled grains, the massive mound of finely chopped parsley, and your diced radishes.
Dress to Perfection: Roll your whole lemon on the counter to loosen the juices, cut it in half, and squeeze the juice of the entire lemon over the salad. Drizzle with 3 tablespoons of oil and add a generous pinch of salt.
The Summer Finish: Give everything a gentle toss. For the best flavor, let the tabbouleh sit for 10 minutes before serving so the grains absorb the zesty lemon juice and radish oils. Serve cold alongside your favorite barbecue dishes with some warm, toasted pitta bread.
💡 Chef's Tip:
Traditional tabbouleh is an alpine-green herb salad with just a scattering of grain, rather than a heavy grain salad. Keeping your grain measurement to around 60g lets the fresh parsley and crisp radishes truly steal the show!
