Oyster return: Are you a native or a Rocker?
03 September 2014
Oysters return this week: well they do and they dont. it is the Native Oyster that returns this week, after a summer break (during which we let them spawn). As the name suggests, they are our Native British Oyster.
Around 30 years ago the Rock Oyster was introduced to our waters really to boost stocks: It grows twice as fast as Natives, as our summer temperatures rarely tempt it to spawn
It has the same succulence as natives, but many prefer the flavours and firmer texture of natives. But which do you prefer?
We know stock oyster knives, so no excuse not to try them!
