This organic Thai green curry paste is a perfect base for your Thai curry. With this paste you can create a scrumptious dinner in less than half an hour so makes a perfect mid-week meal.
Serving Suggestion
Heat 2 tablespoons of sunflower oil in a pan over a high heat.
Add a medium sliced onion and 2 crushed garlic clothes and fry for 2-3 minutes to soften
Add 500g (1lb 2oz) of vegetables of your choice and fry until lightly browned.
stir in ½ jar of Geo organics Thai green curry paste and cook for a few seconds
Add 300 ml (11fl oz) of coconut milk
Add 3 chopped green chillies (optional)
Add 1tbsp of soft brown sugar
Bring to the boil and then simmer for 10 minutes stirring occasionally
stir in 1 large pepper, dressed and thickly sliced and 2 tbsp lime
Cover and simmer for 10 minutes
Add 2tbsp of fresh chopped coriander and season to taste
Serve with boiled rice and garnish with fresh coriander leaves
