First Sprouting Broccoli, Sprouts & Savoy Cabbages

The cooler, damper weather means we have a brassica triple whammy this week of purple sprouting broccoli, brussel sprouts & Savoy Cabbages.

 

With its delicate mini cauliflower style heads, and its tender stems, it always feels a bit like a veggie hybrid,combining the best of a filling brassica with the lightness of a bean. And coming as it does, when the dark nights arrive and when summer produce is coming to and end, it provides an unlikely and richly fulfilling succour.

 

Steam it for around 15 mins, adding some de-stemmed cavalonero leaves half way through. Toss in olive oil, crushed garlic and seasoning, and serve immediately.

 

Top tip: if you are not serving immediately, do plunge into cold water, so they keep their colour - they are very easy to re-heat in the microwave, and will  be no less presentable or tasty.
