We are offering new butter this week from Lincolnshire Poacher - salted & unsalted varieties.
Their butter is "whey cream" butter, as opposed to sweet cream butter, meaning that is is made using the whey left over from the cheese-making process (as opposed to the full sweet cream).
This means that it has been exposed the cheese-making cultures along the way, which gives it a wonderful and unique flavour.
Also, technically it hasn't been pasteurised - but instead has been thermised - a form of heat treatment that is a kind of water bath method of heating - ie much milder than pasteurisation would be.
