Another way of getting round the fiddly carving of a whole partridge on the plate. A partridge fillet can be cooked in the same way as you would a chicken breast fillet - you will find you have a tasty and healthier alternative! As a rough guide allow 2 fillets per person for a starter and 3 for a main course.
