A mild salami with the subtle tang of whole fennel seeds.

Fennel seeds are widely used in Italian salamis and are known as Finocchiona. Fennel aids digestion and is therefore excellent to offset the richness of salami.

As with all salamis, this product is ready to eat and best served at room temperature. It is excellent alongside other air dried salami or meats as a dinner party starter or light lunch with a salad, chutneys and other condiments, good bread and maybe a glass of wine or beer!

The salami can be used in cooking for instance in a pasta sauce or casserole, however, the fennel cured sausage is the recommended (and cheaper!) product for use in this way unless you are specifically looking for the firmer texture that this product gives.

Use a sharp knife and slice when still chilled. You can try thinly slicing it so it is wafer thin or cut into thicker slices that give more texture.
