Big-leafed, mature spinach has been planted in the autumn and after a winter break it re-emerges in the spring, and is a lovely sweet leaf
.Because overwintered spinach has to be tough enough to soldier through the winter, it’s not the best suited for salads like the baby spinach, but its lovely if wilted or lightly sauteed.
Make sure you rinse it well before cooking.
