Fior di Latte literally means “The Flower of Milk" and is nowadays commonly, but mistakenly, called with the generic name of “mozzarella” (traditionally only used for mozzarella from Buffalo milk). It is made of cows’ milk and, as such, has less moisture and lower fat content than buffalo milk mozzarella, and is consequently more firm with a more delicate flavor. Available in a variety of formats and shape, fior di latte is one of the most versatile soft cheeses, with a milky flavor and best served at room temperature.
