We visited Maldon Oysters in Cock Clarks, Essex and spoke to Chris Hadfield about these wonderful tasty creatures that have been around for millions of years and as Chris says, look set to hang around for a lot longer. Watch the video here:
 
 
 
Maldon Oysters are based in the Blackwater Estuary in Essex. The estuary has an ancient tradition of oyster fishery which can be traced back to roman times with natural oyster beds of wild Portuguese oysters, Japanese Gigas and Kumomotos. All oysters follow strict natural cycles of a minimum of four years and are caught, dredged, and finally handpicked when exposed to low tides in line with the company's sustainable tradition and respect for traditional oyster fishery which is well recognised among chefs from all over Europe.
