Use your soft and bendy carrots and turn them into something delicious.

If used generously:
You will receive:
1 x Carrots, Washed (1Kg)
1 x Fennel Seeds (50g)
You’ll Need

1kg carrots (grated or matchsticks)

1 tsp fennel seeds (lightly crushed)
From your cupboard:

20g salt
-
3 cloves garlic
-
1 tsp smoked paprika
-
1–2 tsp chilli flakes
-
1 tbsp apple cider vinegar (optional, for extra tang)

1 x 1L jar (comfortably full) OR 2 x 500ml jars
Method

Salt carrots 1–2 hours.

Massage well.

Mix in remaining ingredients.

Pack tightly.

Ferment 5–7 days.
Why It’s Interesting
Smoked paprika gives depth.
Fennel adds subtle sweetness.
Very good with cheese toasties.
Soft carrots are perfect here — texture improves during fermentation.
