This new addition to our White Lake family is a small but perfectly formed cheese. Inspired by the French Crottin, it is similar to that, and can be eaten at both a young age and matured on to firm up and develop more savoury flavours. The centre is dense owing to the pre-draining of the curd and a sweet goats milk flavour gives this high acid cheese a joyful lift with flavours of macadamia, almond and mushroom coming through.
This cheese can be used baked, grilled or just as is. Fantastic on a salad, or as a starter. Will also grate once fully mature to hardness.
This cheese is made with unpasteurised milk and vegetarian rennet.
