Tasty New Soft Cheeses

Introducing a new range of cow/goat cheeses from specialist cheese producer Wardhall Dairy...

We are trialing their:
Arkleby, a soft mould ripened cheese made from unpasteurised cows’ milk supplied by a local farm. It is similar to Camembert, with a full, creamy texture and a white rind.
Ashed Prospect (Small, Large), a slow coagulation goat milk cheese. It is salt washed, drained and ready to eat immediately. A soft creamy cheese with a light, slightly citrus flavour.
Blindcrake, an unpasteurised soft blue cow cheese similar to blue brie.
Bobbin, a soft creamy unpasteurised goats milk cheese. It is wrapped in white wine soaked sweet chestnut leaves & tied with raffia.
and Flats Beck, a creamy unpasteurised cow milk cheese flavoured with garlic, chive & parsley. Soft & spreadable it is a tasty addition to any cheese board.

Wardhall Dairy was set up in 2007 by Thomas and Lynn Ballantine Dykes on the family farm, Ewe Close, which lies between Gilcrux and Arkleby in north west Cumbria. Lynn hand makes all the products in a small purpose built dairy room on the farm and Thomas is in charge of the paperwork. The dairy is just one of many activities taking place at Ewe Close Farm where ten different types of sheep, cattle and pigs are bred. The farm will in due course be applying for Rare Breeds Survival Trust Approved Farm Park Status.
