The arrival of Wild Mallard Duck, completes our core range of game and so we are very happy to have them
They are the largest of the duck we get, and are very simple to cook - stick a quartered orange inside the seasoned cavity, cook for 30 minutes at 180c, leave for 15 minutes and serve - it should be pink.
Very different to pheasant, they have a stronger richer flavour and each bird will feed 2-3 people.
