Bringing back Buttermilk
14 May 2013
This week we are bringing back buttermilk as our friends at Ivy House Farm have found a way of increasing its shelf life after experimenting with the pasteurization process.
Buttermilk was once a staple in our shops. It is a natural by-product from making butter and can be used in baking - commonly as an ingredient in soda bread. It is almost impossible to find traditional buttermilk in the shops today but you may come across cultivated buttermilk. This is just skimmed milk with lactic acid added. Traditional buttermilk results when cream is churned and separates into butter and buttermilk.
It can even be drunk 'straight' as a time-honoured hangover cure!
