Chicken Feet make a welcome return - why?

We welcome back chicken feet this week, after quite a gap, but after quite a few requests.

Why? Because chickens are generally pretty lean, low fat animals, and whilst the using
carcasses for making a chicken stock is good, it can lack the nutritious fattiness that you might otherwise get from other types of animal carcass.

Chicken's feet rectify this, and the rich gelatin contained within, when used alongside a regular carcass creates a really rich and nutritious stock.
