We have three types of Edible Flower in this week:
1, Sow Thistle Flowers - with its broad leaves and yellow flowers, sow thistle looks like a larger, prickly cousin of the dandelion. And indeed, its health benefits are similar. Its leaves -- made into tea or eaten as a salad green -- have long been used to treat inflammation and digestive upsets, and as an appetite stimulant.
2, Wild Charlock Flowers are both peppery and mustardy. They work best in cold salads or hot soups, the latter they can be tossed in just before serving.
3, Nasturtium Flowers - The nasturtium is an annual flowering plant whose edible leaves and orange, red and yellow petals have a flavour that is similar to watercress. The flower buds and seeds, picked when soft and pickled in vinegar, can be used as a substitute for capers.
