A warm spring sun means produce starts to move and so are we are delighted to have the first of the white sprouting broccoli in this week!
A bit more slender than its purple twin, and described by local resi Nigel Slater as " like a dozen or more tiny, slim cauliflowers attached to every plant, each one held in a tight curl of protective pale-green leaves"
Well if that isnt enough to serve up for a Mothers Day lunch, then nothing will be!
The White Sprouting needs a bit less cooking than the purple, and so you should watch it very carefully to avoid overcooking - NIgel has a couple of lovely recipes for it, though it also makes a lovely green accompaniment to a meal just steamed and seasoned.
White sprouting Broccoli is sometimes referred to as "spring asparagus" and there is a resemblance between them - if nothing else, white sprouting is a lovely way to remind us that it is Springtime and Asparagus in only a few weeks away..
