  • Sea salt & freshly ground black pepper

  • Optional: smoked paprika, ground cumin, or turmeric

  • Optional: fresh parsley or coriander to finish

  • Optional: a squeeze of lemon or crumbled feta

👨‍🍳 How to Cook

  1. Roast the vegetables:
    Preheat oven to 200°C. Toss sliced peppers, cherry tomatoes, and sliced onion with olive oil, salt, pepper, and a pinch of smoked paprika (optional). Roast for 25–30 minutes until caramelised and slightly charred.

  2. Cook the grains:
    Meanwhile, simmer the Pilau Mix in salted water or vegetable stock for around 25 minutes until tender but still with a little bite. Drain well.

  3. Combine & finish:
    Fold the roasted vegetables through the warm grains, drizzle with olive oil, and season to taste. Garnish with chopped herbs or a squeeze of lemon.

Optional add-ons: Crumbled feta, toasted nuts, or roasted chickpeas for extra protein and texture.
