Preparation
When cooking winkles from fresh, make sure you wash soak them in salted fresh water for about 30 minutes, this will allow them to clean themselves.
Cooking
They only need minimal cooking of about 2-3 minutes in boiling salted water, or 20 minutes baked in the oven (why not try this recipe from the independent)

Serving
Try your winkles with lemon, butter, mayo and plenty of crusty bread to mop up those juices.
