We are delighted to have goat in this week - the carcasses are ex-dairy, and are around 2 years old - so really the same age as our Mutton - mature, but not old. And being ex-dairy, they have a good ethical bent of making the most of animals that are no longer used for milking.
This is a slight experiment for us - I am hoping that the age of the animals will mean that the different cuts will provide depth of flavour, as well as a good range of slower and quicker cooking recipes.
It is priced pretty keenly this first week and so I am hopeful that you will try it out, and provide us with feedback, to see if it something that we can offer on a regular basis.
