Lamb is now the only widely farmed animal where consumption remains seasonal in Britain - and wow, what a time to eat it!
As our new season lamb was born in the spring, it was able to spend more time basking in the sun and munching on grass and moorland plants (as opposed to the indoor-reared winter lambs). This gives the flesh that bit extra tenderness, sweetness and freshness.
