Seasonal Roasting Joint: Rolled Venison Shoulder
If you are after a joint of meat that is seasonal & sustainable & affordable, then you can do a lot worse than go for a rolled shoulder of venison from Devon. Venison is Wild and until they decide to re-intoduce a predator other than humans, eg wolves, they remain very plentiful. Plus they are naturally lean and very flavoursome.
More prized is the venison haunch, but that is expensive - the shoulder works very well as a braised pot roast joint, and at £8 / kg is excellent value.
