We have the old and the new of the Ovine world this week -
Nicola is now moving onto her New Season Lamb - coming through a little earlier than it usually does - but a welcome seasonal treat this week. It will be smaller, lighter, and significantly more delicate than the lamb we have had in previous weeks, and so well worth trying!
At the other end of the scale, if you like your meat full of flavour, then we have Mutton as well coming in from Nicola - her mutton are only 2-3 years old, giving a deeper, darker, and has a stronger taste than lamb, and is therefore suited to slower cooking. But at 2-3 years, the sheep are still quite young, and therefore the meat is firm but not at all tough...!
