A beautifully prepared and presented joint, this pork loin is perfect for a Sunday lunch with a generous helping of crackling. With the rind already scored, the crackling will be crisp and the meat will be sweet and succulent.

The Butcher: The loin runs from the shoulder to the sirloin. This is the best joint for roasting quickly and produces delicious crackling.

In The Kitchen: The loin is a lovely joint to roast, and is an impressive centrepiece to bring out to the family and your guests. Roast on celery, carrots and onions, and then create a lovely gravy from the juices.
