1 x Red Salad Tomatoes (400g)
1 x Recipe CardTomato and Cannellini Bowl
1 x Whole Lemon
1 x Red Onions (125g x 1)
1 x Cannellini Beans (400g)
1 x Sunflower Seeds (20g)
1 x Fresh Basil (apx. 50g)
1 x Natural Wholemilk Yogurt (150 ml)

 

From Your Pantry
 
2 tbsp olive oil
Pinch of salt
Black pepper
2 thick slices crusty bread
 
Method
 
Prepare the salad
 
Roughly chop the tomatoes, drain the cannellini beans and thinly slice the red onion. Add everything to a large serving bowl.
 
Dress the vegetables
 
Drizzle over the olive oil and lemon juice. Season generously with salt and black pepper, then toss well. Allow the tomatoes to release some of their juices.
 
Add the toppings
 
Spoon the yoghurt into the centre of the salad. Scatter over the basil and sunflower seeds.
 
To Serve
 
Use the bread to scoop up the beans and soak up the tomato juices and creamy yoghurt from the bottom of the bowl.
