Our honey producer, Graham Johnson has kept bees for over 30 years. He has apiaries in the parishes of Heybridge, Goldhanger, Tollesbury, Tolleshunt D’Arcy and Salcott. They are all situated in an unspoilt costal area, north of the Blackwater Estuary in rural Essex.
Each year, The runny honey is taken-off in July and made from borage, lime, and other later-flowering plants.
(The set honey is extracted in May and made from oil seed rape, top fruit and hedgerow blossom and spring flowers).
All honey is spun out of the comb, coarse filtered and run into pails. No heat is used. There it sets or is sold raw.
To bottle, the set honey is gently warmed and run into jars. In order to keep it liquid, the runny honey is warmed and filtered again.
Graham produces all his honey from his home in Tollesbury, Essex where he works alone. He never buys any honey in to supplement his stock, and he has made his living from bees and farmwork.
