From Your Pantry
 
Olive oil or cold-pressed rapeseed oil
Sea salt and freshly ground black pepper
Optional Extras
Smoked paprika, ground cumin or turmeric
Fresh parsley or coriander
Squeeze of lemon
Crumbled feta
Toasted nuts
Roasted chickpeas
 
Method
 
Roast the vegetables
 
Preheat the oven to 200°C.
 
Toss the sliced peppers, cherry tomatoes and sliced onion with olive oil, salt, pepper and a pinch of smoked paprika, if using. Spread onto a roasting tray and roast for 25–30 minutes until caramelised and lightly charred.
 
Cook the grains
 
Meanwhile, simmer the Pilau Mix in salted water or vegetable stock for around 25 minutes until tender but still retaining a little bite. Drain well.
 
Combine and finish
 
Fold the roasted vegetables through the warm grains. Drizzle with olive oil and season to taste. Finish with chopped herbs or a squeeze of lemon, if desired.
 
To Serve
 
Serve warm as a main meal or side dish.

Crumbled feta or halloumi
Toasted nuts or roasted chickpeas for extra protein and texture
